Sean, tell us a bit about Never Never Distillery, what makes your gin special?

We began Never Never Distilling Co with the mindset of creating some of the boldest, most juniper-forward gins on the market. We wanted to start a juniper revolution, bringing attention to gins most important botanical by making it our signature. At the core of every gin we make is the Triple Juniper Process. We use a combination of steeping, pot and vapour distillation to extract both the bright and the earthier flavours of the juniper berry in a single run. This process separates us from every other Australian gin who tend to focus on flavours other than the juniper.

What did you want to be growing up?

I wanted to be an actor or a stand up comedian. I used to actually do it for a little while in Brisbane and Melbourne. I’ve since hung up the microphone, however I’m certain one day Ill get back into it, even just for a bit of fun.

 Where do you find inspiration for your gin flavours?

We find inspiration from classic London flavours, it’s what drew us to the gin category in the first place. London style is heavy on ingredients such as coriander seed, liquorice root, angelica root and of course, Juniper! We take these classic ingredients and modernise it using contemporary local ingredients such as pepperberry.

 What do you like to drink your gin with? 

My favourite way to drink our gin is actually with ginger beer, lime and mint. A Gin and Ginger works so well largely in part to the warm spices such as cinnamon and pepperberry that you can find in our gin style. It works beautifully with the gentle heat of fresh ginger beer.

Have you found that Sydney’s taste for gin is different to South Australia?

Sydneysiders and Adelaideans both like a twilight aperitif, albeit in slightly different surrounds. We find South Australians are very parochial when it comes to drinking local gin and with well over two-dozen gin brands being produced here, there is quite the selection to choose from. Everyone seems to like a Triple Juniper Gin and tonic regardless of location, which is a great thing from our perspective!
